MENU Amuse Bouche: Shiitake crusted seared Tuna on wonton w/ miso aioli and calamansi soy Chateau Martinolles Cremant de Limoux Rosé (Chardonnay, Chenin Blanc, Pinot Noir)
Appetizer: Grilled Romano w/sea truffle dressing, asiago, magalista lardon, lemon pangrattato Domaine Albert De Conti Cuvée Des Conti (Sémillon, Sauvignon Blanc)
Main: Pork Schnitzel w/ tempura fermented cabbage, rye spaetzle, pickled mustard seed, smoked apple and fennel emulsion Durvillea Pinot Noir AND Via Caritatis Vox Angelorum Rouge (Syrah, Grenache)
Dessert: Whipped lemon curd with Italian meringue Thomas Goss Riesling
