Dr. Rollie G. Mills, co-founder of Funky Rooster Coffee, will take you beyond the basics of coffee roasting and brewing. Dr. Mills, an expert in water filtration and avid coffee enthusiast, will explore how scientific and engineering principles are key to making the perfect cup. From understanding the impact of ion concentration in water to highlighting innovative scientific projects in the coffee industry, this session will deepen your appreciation for the science behind every sip.

Dr. David Gonthier, Director of the UK Coffee Lab, a Coffee Q-Grader and Associate Professor at the Martin-Gatton College of Agriculture, Food and Environment will share insights from his coffee farming adventures in Honduras and his exploration of the specialty coffee market. He will guide attendees through a brief coffee tasting experience and discuss whether specialty coffee provides opportunities and equity to producers within the global coffee trade.

Dr. Tonya Kuhl, Professor of Chemical Engineering and co-Director of the UC Davis Coffee Center, will lead the third session of Coffee Science Unfiltered. Dr. Kuhl will explore how the UC Davis Coffee Center is shaping the next generation of coffee experts through cutting-edge research, educational initiatives and industry partnerships. As a passionate coffee enthusiast and educator, she will discuss how scientific principles are applied to improve coffee production, with a focus on research in colloidal science and self-assembling fluid systems.

Brandon Bir, Director of Sustainability at Crimson Cup Coffee & Tea, will lead the fourth session of Coffee Science Unfiltered. In this session, "Decoding Sweetness and Acidity in Coffee," Brandon will explore sustainability within the coffee industry, covering the supply chain, regenerative agriculture and how to sell sustainability as a cost-saving strategy for producers, exporters and roasters.

FROM BEAN TO BUSINESS

Fausto Sarmiento, Center Director for the Kentucky Small Business Development Center in Lexington, will lead the fifth session of Coffee Science Unfiltered. Sarmiento will provide an overview of the key considerations for opening a coffee shop, including developing a business model, crafting an effective business plan, and navigating challenges faced by early-stage businesses. He will be joined by the Blue Roasters LLC team, who will share their experience launching a mobile coffee truck and discuss the complexities of permitting and operations.
